- Explain how a garlic press works
- Use a garlic press effectively
The garlic press is the perfect example of a kid-friendly tool for the kitchen. Though it gets blasted by chefs and serious home cooks, the garlic press is a perfect way to empower kids in the kitchen.
In Eating on the Wild Side, Jo Robinson states that “a garlic press does the best job or intermarrying alliin and alliinase, maximizing the production of allicin”.
Both alliin and alliinase are compartmentalized in the clove of garlic. Pressing it brings those two in contact allowing the alliinase, an enzyme, to convert the alliin to allicin. It’s this compound that has antiviral, antibacterial, and anti-fungal properties and what gives garlic its distinctive aroma.
Whether you use the garlic press or not, it’s a great tool for kids and a perfect opportunity to set them on a path to health that will influence their choices for the rest of their lives.
Tools & Materials
- Garlic press
- Storage container
Introduction (10 minutes)
Begin the lesson by explaining what “mincing” is and how a chef might mince a clove of garlic with a knife. Then present the garlic press and explain how it functions. Explain how allicin is created and the medicinal value it has for us.
Activity (20 minutes)
Discussion (10 minutes)
Can you see the allicin being created? If it’s anti-bacterial, how do you think that might help our bodies? What about antiviral? Or antifungal?
Assessment (5 minutes)
Use the following questions to assess the Students before and after the lesson. Tally the responses of the group in the Assessment Tracking Log for comparison:
- By a show of hands, how many of you think food can be medicine for our bodies?
- Now that you know how good can be for our bodies, how many of you will try to eat more garlic?
